The only thing that I do differently is to boil the peppers with the skin on for about 5 minutes- then I don't even have to go through the process of roasting and peeling. It saves so much prep time, and I really feel like the flavors are all there! The following goes into the stuffed pepper and egg mixture: one 15oz can black bean, drained, 2 ears corn (remove kernels, sautee in olive oil & butter.
