These are my confessions...

I haven't been cooking much lately.

My dad bought me this bottle of wine as a joke, but I think it's perfect.

Here's the back. So true, right?

Poe is so funny, he loves jumping on the bar stools and sitting up to the counter like he's going to be served. If you give him a fry this is his reaction every time! We love watching it and usually do it over and over, letting Corky reap the rewards!



All of you Glee tweeters, posters, and Facebookers finally piqued my curiosity and I started watching the first season on Netflix streaming.

Let's just say I was up until 6 am this morning watching while J happily snored next to me.

My favorites thus far (I'm only on episode 7 or 8 so don't ruin anything for me) has been I Could Have Danced All Night and Defying Gravity. Both were already personal favorites of mine, so it was cool to see them on the show because they aren't exactly BillBoard Top 100 chart toppers.

Also, is it normal to have fluctuating crushes between Finn, Mr. Shuester, and Puck?

iPhone Recaps

Ok, so I've been a horrible food blogger the past few weeks!

But, deep in my veins I was still a food blogger at heart. Something in my DNA would make me whip out my iPhone and snap some pics of note-worthy meals I had for you guys.

A slurpee!! Ahh, when was the last time you had one of these? It'd been way, way too long for me!

We went to Ikea one weekend to look at bathroom stuff for the re-do. My dad got Lox.

I got the Swedish meatballs and 3 bars of chocolate that we all split!!

An apple I ate as a snack had a bellybutton!

Dinner out one night featured a not so appetizing sounding drink menu ..

And this past weekend we went into the city to meet with Mara for our engagement photos! She took us to Old Town Social where we drank Prosecco.

And I ate these delicious poached eggs over spinach and artichoke hearts with Hollandaise!

In addition to splitting these sausage and gravy biscuits with Johnny! (He had his own plate of Banana's Foster french toast while Mara let us sneak a taste of her Waffles and Sausage.)



We were serenaded by a Dixieland band because it was brunch! Fun!

Video Demonstration: Sausage Stuffed Peppers

I was surprised to find a huge box on my door step Friday! Inside were three bottles of Newman's Own salad dressings, three jars of Newman's Own sauce, a flip HD camera, two coupons for Newman's Own frozen pizza, and instructions to make a short video.


The video instructions were simple enough:
  • demonstrate a meal that could be cooked in 30 minutes or less
  • showcase at least one Newman's Own product

I could do that! And I already had just the recipe in mind:





Sausage Stuffed Peppers

4 bell peppers
1 onion
1 lb. sausage
1 handful mozzarella cheese
1 jar Newman's Own sauce

Put a large pot of water on the stove to boil. Wash and cut the peppers in half lengthwise, removing the seeds and membrane. Chop the onion. Carefully put the 8 pepper halves in the boiling water, return to a boil. Place the onion and the sausage in a high sided skillet and cook over medium heat until the sausage is no longer pink. Turn off both burners. Stir in a big handful of cheese with the sausage and onions. Turn the oven on to 350°. Drain the peppers and place in a large baking dish. Spoon equal amounts of the sausage mixture into each pepper. Top with about 1/4 cup of Newman's Own sauce. Cover baking dish with foil and place in the oven for about 10 minutes. Serve immediately and enjoy!

NY Eats & Blizzard

My mom met me in New York to look at wedding venues and dresses. We stayed at a family friend's house and were treated to some delicious home made food!

Look at this adorable breakfast spread! Talk about spoiled!

They actually tapped and made their own maple syrup too! It was delicious and rich!

Later Sandy made us a key lime pie totally from scratch! I love tart pies, so this was a highlight of the trip for me!

My mom and I were both starving between venue appointments, so we pulled into a little roadside deli. I'm jealous these are so abundant up there! I got an Italian combo of salami, ham, mortadella, provolone, olive oil, lettuce, and marinated red peppers on a fresh Kaiser roll. It was gone in about 2 minutes flat.

Friday Firsts - Popchips!

Friday Firsts

Happy Friday everybody! Brrrr it is still cold in the Midwest! All of my relatives in North Carolina, Florida, and California are teasing me with Facebook posts and tweets about their weather! I don't think this week got above 50° most days! What's the weather like in your area?

My first for this week is trying a new product, Popchips! I received a "chipment" to try six of their flavors. I was generous and even let Johnny eat the ones that didn't have whey! We were really excited to try these after seeing them made on Unwrapped! (Video can be seen here.)

Cheddar = 5/5
Completely satisfying as a snack. Salty and cheesy and crunchy! Perfect! My favorite of all the flavors.

BBQ = 4.5/5
Hearty BBQ flavor with bold spices and a hint of sweet. My 2nd favorite!

Sour Cream & Onion = 3/5
Tasted most like a rice cake of all the options. Flavor was sort of muted and had a hint of a bitter after taste.

Original = 4.5/5
Lightly salted, crisp potato flavor. Satisfies that munchy snack fix.

Salt and Pepper = 3.5/5
Major pepper flavor! Great if you're a huge pepper fan, but eating the whole bag is almost too much.

Salt and Vinegar = 5/5
Johnny excitedly exclaimed he loved these. A big fan of salt and vinegar he loved their bold flavor that wasn't down played at all.

Video Demonstration: Pan Fried Pork Chops

After 9 months of blogging, I'm excited to introduce a new feature here at Dinner at Christina's - video demonstrations!

Ever since I posted my pan fried pork chops back in February, Googlers have been pouring in by the hundreds looking for pork chop tips, help, and answers to their confusion. It only seemed appropriate my first video would help some of those stumped by the sometimes daunting pork chop.

Featured is the identical dinner I prepared in the original post: pan fried pork chops with panko breading, homemade rice a roni, and frozen peas. It was our first video (me presenting and Johnny filming/editing), I think we did a pretty good job, and will get better in time! I hope it's helpful and will answer that ever-burning question: "how in the world do I pan fry a pork chop?" Enjoy!



What recipe or cooking technique (previously featured on my site, or not) would you like to see a video demonstration of in the future? I'm very open to any suggestions you might have, especially if I can answer somebody's cooking questions or clarify confusions! Even if it's not something I know, I'll research, try my best, and we can learn together!

Eggstractor

Let me show you the best $2.99 ever spent!

The Eggstractor!!!!!! I bought it in Florida at Flea World, marked down several times and figured why not?!

We tried with Johnny's mom's eggs and because they are so fresh they don't peel well and it was a dud. So, I bought some eggs from the store (don't worry I still stayed free range and vegetarian fed) so we could try it out. Whoo boy!

First - it worked. I was shocked and amazingly pleased. No more tapping and rolling and peeling and cursing eggs.

Second - it's so much fun!



If you do get yourself an eggstractor, I have two pointers. Do not follow their advice of only boiling the eggs 6-8 minutes because our yolks were way underdone. I'd go for the standard 10 minute boil. And keep the eggs cold up until the minute you're going to eggstract them. Our first few went well and the last ones that had been on the counter were a lot more stubborn (as demonstrated in the above video).

You tap a hole, using the attached point in the small end of the egg and whack the wide end on the counter.

Then, you put the spring cover thing over it, cross your hands and pump down with force and out shoots the egg!

Most of the time you just have a very small section left at the wide end to peel off, but that's no biggie!

Pan-fried Pork Chops

Tonight's dinner uses one of the buy 1 get 1 free packages of pork chops. I rinsed them, patted them dry and seasoned both sides with a little garlic powder. For the coating, I dredged them in salt and pepper seasoned flour, beaten egg, and panko breadcrumbs (no whey!). Then, I pan-fried them in a little vegetable oil for about two and a half minutes each side because they were only about 3/4" thick. If you were cooking the thick-cut ones, I would go 3-4 minutes on each side. I took them out of the pan and let them rest on paper towel for a couple minutes as the rest of the meal came together. They were really tender and juicy - just how I love pork. The instant it turns dry, nothing can save it for me.

To accompany the pork chops I made my mom's rice-a-roni. We ate this all the time growing up, made from scratch and it never occurred to me until I was in my late teens that it was rice-a-roni. Until I moved out, I'd never even had rice-a-roni from a box, only this home-made version. It's simple- I promise! Probably a lot healthier than the boxed version, too. Just break some dried spaghetti noodles into 1 - 2" pieces and brown in a saucepan with just a little butter and olive oil. Next, throw in 1 cup of white rice, 2 cups of water and a bouillon cube (or 2 cups of stock). Bring to a boil, stir, lower the heat, cover, and let simmer for 20 minutes. You could also substitute brown rice, just adjust the cooking time to 30-50 minutes, depending on the brand, package instructions, etc. This re-heats really well in the microwave, so you could make a big batch and have it as sides for two dinners during the week. My mom has frozen it before, thawed it, and reheated it later, too! Just remember to add a small amount of water to prevent the rice from drying out and getting crunchy in the microwave.

Finally, I steamed the last of the Superbowl broccoli with some frozen peas. I love vegetables, so I never really require much spice or seasoning. I prefer the untampered flavor of steamed vegetables, as long as they aren't overdone and soggy. I like them on the crunchier side, where the colors are all still bright and vibrant, and the flavors haven't been watered down.


An interesting little tidbit for you, that my brother told me: panko, which are Japanese-style breadcrumbs, are actually ELOCTROCUTED (crazy, right?!?) loaves of bread. There are two types of panko, the white (what I used), which uses crustless bread, and tan, which uses the entire loaf. Apparently they send a surge of electricity through the bread and it electrocutes it, exploding it into the crunchy little breadcrumbs, packaged up and sold as panko! If you're having trouble finding panko at your grocery store, try looking in the ethnic food aisle, by the Chinese food. That's where mine was hiding!

Speaking of my brother, he's currently back home in North Carolina, visiting my parents with his girlfriend, who is also a CIA graduate chef. My dad was bragging to me earlier that the two of them are making dinner for my parents tonight. Baked chicken, risotto with real, yes real, black truffles (his words), squash, and mushrooms. Lucky ducks. Not only do chefs cook really awesome meals, but they are dish-washing phenoms! I guess they must get a lot of practice, but Michael can have a whole sink of dishes washed and drying before the meal even hits the table. Double lucky ducks.
