Griddler (or Waffle Iron) Hash Browns

Breakfast for dinner had been planned for 2 days. I just needed a lil sumthin' sumthin' extra on the side to round out the meal.

Then, one of my Pinterest friends repinned these hash browns, and it was settled. Original post and recipe can be found here. My take on them is below:




2 medium potatoes, shredded
1 medium onion, shredded
1 tsp olive oil
1/2 tsp salt
1/4 tsp black pepper

Shred the potatoes and onions using your preferred method. I used my mandolin, but you could use your food processor's grater, some old fashioned Grandma's kitchen type grater, or just a regular ol' box grater.

Throw the grated potatoes and onion in a medium bowl with the olive oil, salt, and pepper. Using a fork, toss everything until mixed well.

Open your Griddler, panini press, waffle iron, or similar weapon of choice. Generously spray with olive oil or non stick spray. Lay the potato mixture out in an even, flat pile, and gently close the lid.


Let cook for 5-10 minutes, and then check on it. The bottom of my Griddler cooks hotter than the top, so I flipped the potatoes at this point. Continue cooking another 5-10 minutes, until they're a beautiful, crispy, crunchy brown.


I served ours with a cheese omelette and turkey sausage links. Later I added some ketchup to the hash browns, but they're delicious on their own. 


It was surprising to get such a yummy crunch from potatoes at home. I usually only get that at diners where I know they slather tons of grease and butter for the desired crunch. Johnny said "holy crap, these are better than Arby's potato cakes." And if you know Johnny, that's high praise. Really high praise.

This whole "recipe" is 266 calories, with ~5g fat from the small amount of olive oil. Both of us ate very hefty helpings (see plate above) and there was still some leftovers.

Weekend Pumpkin Pancakes

I grabbed this at a gift shop while Johnny and I were in Sleepy Hollow, NY last weekend. It was all decorated for fall and Halloween, so really I couldn't resist. Plus, you could smell the spices through the bag, tempting you to take it home and make them. I love how it says "best weekend pancakes" because weekend pancakes always seem to taste better than weekday pancakes. (I think so at least.)

It was nothing crazy. I probably could have found a recipe to make at home. But hey, it's convenient and cute. I made it for dinner because I love breakfast for dinner!

The mix was really thick. Usually when I make Bisquick pancakes they're runny and pour easily. This was super thick like a cake batter.

I ran over to my parents' house and stole borrowed their griddle. We don't have much in the pots and pans department so it just seemed easiest. I cooked a package of little sausages and about a dozen of these fluffy, cakey, pumpkin spice pancakes. The scent was ahhhmazing. I told Johnny that our upstairs neighbor probably wanted to kill us from the smells wafting up into his apartment.

I ate 3 pancakes and 4 5 of the little sausages. I've been trying to behave myself for the wedding. I'm tracking my exercise on Daily Mile and have swapped out a meal a day for SlimFast shakes. The two month mark is coming up quick!!

Korean Pancakes

When I opened the box from Sophia, this was one of the things I was most excited about. To be honest, I didn't really know what to expect. I saw "Hot" and I saw "Sweet." I thought it would be like a sweet batter with a spicy filling.

The photos on the back are adorable. Why can't our American packages have cute little cartoons showing us how to cook each step!?

I saw the brown spoonful of filling and thought perhaps some sort of bean paste?

Well, needless to say, I was wrong! First, you mixed water, an included packet of yeast, and the pancake mix in a bowl and kneaded for 5 minutes. You rolled this mixture into 10 balls.

Next, you rolled out the dough into your hand, put a spoonful of the mixture, and sealed it. You placed it in a hot pan with a little oil. After the bottom browned, you were instructed to flip it over and mash it with a spatula. Then, you cooked each side an additional 1-2 minutes.

I anxiously broke into the first one and promptly burnt my mouth on the molten hot filling. Turns out, it is like a cinnamon sugar mixture. It melts down to this gooey, maple syrup kind of jam with little bits of nuts in it. Sinfully delicious! Thank you, Sophia!

Banana Walnut Muffins

Like Errign, I can't stand bananas once they are ripe. I like them with a little bit of green, right before they become ripe, otherwise it makes me want to gag.

Anyways, I bought a bunch of bananas for the three men currently residing in my home. And they sat, and sat, and sat. I asked what was going on once they became spotted and they confessed that none of them wanted to eat them in case somebody else wanted them.

I know, right? Men!

So, in my first ever baking experiment where I kind of loosely went off a recipe and threw stuff in a bowl, hoping it'd turn out:

3 over ripe bananas, mashed
1 1/2 flour
3/4 sugar
1 tsp baking soda
1 tsp baking powder
1 tsp vanilla
1 tsp cinnamon
1 egg
1/4 cup vegetable oil
1/4 cup milk
1/4 cup water
pinch of salt
1 cup chopped walnuts

In a medium mixing bowl, mash the bananas. Add all of the other ingredients, except the walnuts. Stir until everything is smooth and incorporated. Fold in the walnuts.

Scoop even amounts into 12 lined muffin tins. Bake in a 350° oven for about 25 minutes.

Breakfast Nachos

Truth be told I'm a night owl.

Actually, the more I read about the subject, I think I probably suffer from delayed sleep phase syndrome. This is the inability to awaken and fall asleep at socially acceptable times but no problem with sleep maintenance. Or, where your timing of sleep is off, or shifted. I sleep full nights, I just go to bed way later and sleep in. My peak period of alertness has always begun at about dinner. I feel my most awake from about 8-midnight.

I remember when I was little my parents would tuck me in bed and I'd read book after book after book. It was not uncommon for me to plow through one or two Baby Sitter's Club, Boxcar Children, or Nancy Drews a night. I also had a variety of cassette tapes my mom would play for me, ranging from nighttime prayers, to songs, and sounds of nature.

So it is of no surprise that most of the time I'm up late reading your blogs or snacking on something tasty.

Tonight I finally got around to making a treat I've wanted for a long time:

Biz's Breakfast Nachos!!!!!

Mine are a slacker's version, nowhere near as gorgeous as hers.

I heated some refried beans in a skillet while I scrambled 2 eggs. Then I mixed the two together. I spread this over some tortilla chips and doused everything with taco sauce. Had I been motivated to, I would have added sour cream or perhaps green onions too.

Either way they were delicious! So filling and tasty. I loved them!

I wonder why it took me so long to try them, or why I didn't think of them myself! I love making breakfast burritos - so a breakfast nacho isn't too far of a stretch.

Packing progress! I've gotten all of the clothes I won't need for the next few months packed. Now I'm working on other unnecessary items like books, photos, and knick knacks.

Because we're still working on the house while living in it, it's going to be a wild dance of musical chairs, but in box form. I'm trying to get as much of our stuff out of the way as possible to make this easier. My goal is to leave just the bare necessities of furniture and stuff to "stage" the house, while having the rest of it packed away neatly and out of our way!

Vegetable and Quinoa Bake

I've been turning to my health cookbooks more and more lately for inspiration. This Healthy Heart Cookbook had a recipe for a rice and broccoli bake. I thought it sounded like a really good idea, so I took it and ran with it. I changed the rice to quinoa, added way, way, wayyy more veggies, and left out some of the cheese.


Crust:
2 cups plain cooked quinoa
1 egg
1/2 cup sharp cheddar cheese, grated
salt and pepper, to taste

Filling:
1 cup frozen spinach
1 bell pepper
1 small onion
2 cloves garlic
2 jarred, roasted red peppers
5 eggs
1/2 cup sharp cheddar cheese, grated
salt and pepper, to taste

Note: This can be made in a single 11 x 7" casserole dish, or separately in two pie plates.

In a medium bowl, beat the egg for the crust. Fold in the cheese and quinoa until evenly incorporated. Season with salt and pepper. Spray your baking dish or pie plates with non-stick spray and turn the crust mix out into them. Using the back of a spatula or your hands, carefully form the crust along the bottom of the dish(es) and up the sides.

Preheat the oven to 375°. In a large mixing bowl, add the veggies as you chop with the cheese. Feel free to add any combination of vegetables and cheese according to your individual tastes or preferences. You could even add beans, potatoes, or salsa - get creative! Reuse your medium bowl to beat the 5 eggs. Add to the large bowl and keep folding with the vegetables until everything is mixed. Season with salt and pepper.

Gently pour the egg and vegetable mixture into the crust(s), using a spatula to even out if necessary. Pop in the oven, uncovered for 20-30 minutes. Check the center for doneness with a knife. Let stand a few minutes before cutting. For breakfast or lunch, I would say this could serve 5-6. For dinner it serves closer to 3-4.

I was nervous about this one, but it really knocked our socks off! The quinoa crust was delicious. It held up really well, and the crunchy bits were really nutty and delicious.

I loved the combination of all of the vegetables. It was a really colorful meal, which always makes me feel like I'm eating healthy!

Apple Cinnamon Pancakes

I love breakfast for dinner! Johnny? Not so much.

But we struck a compromise that I can make it at least once a month. I didn't feel like an elaborate dinner, so I made some delicious apple cinnamon pancakes that hit the spot.

Even Johnny had to admit that they were great!


2 cups Bisquick HeartSmart mix
1 1/4 cup skim milk
1 egg
1 Tbsp vanilla
1 tsp cinnamon
1 1/2 red apple, diced

Whisk everything but the apples in a medium mixing bowl. Wash and cut the apples in a small dice and fold into the mix.

Preheat a griddle pan and scoop the pancakes out using a 1/4 measuring scoop, for even size and cooking.

Once the pancake's edges become dried and the whole pancake forms small bubbles, flip it over to finish on the other side. These are best cooked slowly over a medium heat so the apples have time to cook and soften.

Makes 14 pancakes using the 1/4 cup measuring scoop.

The side of the Bisquick HeartSmart box says that 3 pancakes are 200 calories. However, the addition of other ingredients (vanilla, apple, etc.) will change that number.

I left the skin on the apple, which made for pretty pancakes and a nice crunch throughout.

In addition to maple syrup, I also mixed sugar and sour cream for another tasty topping option.

The apple was moist and soft, with a warm comforting flavor from the cinnamon. I loved these pancakes and will definitely be making them again!

Now, for some wedding shoe help!! I know I'm a food blogger, so I threw a feeler out on Twitter and had positive responses that nobody would mind some random wedding/shoe talk.

I would like to wear green heels during the ceremony. I had like 20 bookmarked, but have since gone through and with Johnny's help have it narrowed down to four options.

Amazing Grass - 1 Year Later

It has been about one full year since I started using Amazing Grass.

I wanted to re-visit this subject and let you guys know how it's been going.

I have used Amazing Grass every single day, except a few days here or there when I forgot, or when I left the tub behind in travels (sad). In total, I'd say in the whole year there were only about 10 days I did not use Amazing Grass.

The benefits have been life-changing for me.

Headaches - completely gone. I've had maybe 5 in the past year. This is huge for somebody that used to get them once or twice a week and have to call out of work when they got bad enough to make me nauseous and cause blurred vision.

Nails - healthy, strong, and fast growing. I have to cut my fingernails every week and my toenails every other week. They are thick and never crack or break.

Hair - healthy, strong, and fast growing, too! In late September I cut my hair to have bangs. It's now early February and the bangs are long enough to put up in my ponytail. That is inches of growth in less than six months.

Acne - I still have small breakouts here and there, mostly around my period. My regular acne and smaller breakouts on my chest and back have disappeared. I used to get large, painful cyst-like pimples on my face and I cannot remember the last time I had one.

Digestive system - before I started Amazing Grass I used to go poo only about two or three times a week. I thought this was normal for me. Since starting Amazing Grass I now go every single day. I believe this regular elimination reduces build-up and toxins in my system which contributed to the headaches and the acne.

Instead of the smoothies, I now mix my Amazing Grass with a small glass of orange juice every morning. I find when mixed with orange juice, the gritty texture of the powder disappears completely.



I purchase my Amazing Grass through Amazon on a subscription basis. The 17 oz. (60 serving) Berry Flavor tub ends up costing about $32, which is far less than I've seen it anywhere else. You can pause or edit your subscription preferences at any time and keep the same cost, too.

NY Eats & Blizzard

My mom met me in New York to look at wedding venues and dresses. We stayed at a family friend's house and were treated to some delicious home made food!

Look at this adorable breakfast spread! Talk about spoiled!

They actually tapped and made their own maple syrup too! It was delicious and rich!

Later Sandy made us a key lime pie totally from scratch! I love tart pies, so this was a highlight of the trip for me!

My mom and I were both starving between venue appointments, so we pulled into a little roadside deli. I'm jealous these are so abundant up there! I got an Italian combo of salami, ham, mortadella, provolone, olive oil, lettuce, and marinated red peppers on a fresh Kaiser roll. It was gone in about 2 minutes flat.

Friday Firsts - Muffin Tin Frittatas

Friday Firsts

Happy Friday everybody! (If you're new to Friday Firsts, click the image above for more information!) Is it fall where you're at yet? We're still enjoying some beautiful weather here, something I'm thrilled about!!

A few things I want to bring attention to before I post my first!

  • I'm an entrepreneur! The all natural dog bones I bake for my dog have gotten a cutesy name and logo. I've sold out of three batches of Corky Crisps at two local craft shows. They're now available on Etsy, too!

Now, onto my first! Ever since Biz started South Beach, her crustless quiches have been making my tummy growl when I read her blog. I thought it'd be a cute idea to make them in muffin tins, like a mini frittata.


15 oz. can new potatoes
4 eggs
1/2 cup cheese (I used skim mozzarella)
11 oz. can of Southwestern style corn (*see note)
salt and pepper, to taste

Preheat the oven to 350°. Mix the last 4 ingredients in a small bowl until well blended. The Southwestern style corn is from Green Giant and contains corn, black beans, tomatoes, and I think chiles.

Spray 12 muffin tins with non-stick spray. Crumble enough potatoes in each well to fill the bottom. Spoon the egg mixture over top each, until the muffin cups are about halfway full. Bake for approximately 20 minutes.

These will keep in the refrigerator for a few days, so they're perfect for weekday lunches. Just re-heat in the microwave for a minute or two and you've got a hot breakfast!

Friday Firsts - Kellogg's Fiber Plus

Happy Friday everybody! I hope all of my east coast readers are now past any danger of Earl by the time you read this!

Last week's Friday Firsts featured a really exciting first from Debbi Does Dinner Healthy! She was interviewed by her local news on money-saving meal tips. You should head over and read about her experience and watch the video - it's great! Congrats Debbi and thanks for sharing your first!

My first for this week was trying two new cereals from the Foodbuzz Taste Maker program. Kellogg's Fiber Plus Antioxidants in Berry Yogurt Crunch and Cinnamon Oat Crunch.


Both Johnny and I tried the Cinnamon Oat Crunch, which reminded me of a healthier tasting Honey-Nut Cheerio. I ate these plain by the handful, or over yogurt. Johnny ate it with milk and noted that it got soggy faster than usual, which then gave it a bit of a "cardboardy" flavor.

I was the only one able to try the Berry Yogurt Crunch because it contained whey, but I loved it! In fact, the box is just about gone! The flakes are really big and have little flecks of red (berry?) on them. There are granola crunchies and also little nuggets of yogurt covered granola. It's a really crunchy, hearty cereal. I ate it with milk and also a few nights as a snack over yogurt.

Basic Scones

The other night I wanted to bake something, and on a whim decided on scones. The last time I made scones they were delicious, but used a whole stick of butter and sour cream. This go around I was looking for something lighter and found the perfect (highly reviewed) recipe, courtesy of Alton Brown. Of course I had to make a few changes, anyways!

2 1/2 cups flour
4 tsps baking powder
3/4 tsp salt
1/3 cup sugar
4 Tbsp butter
2 Tbsp vegetable shortening
3/4 cup skim milk
1 egg
filling of choice (dried fruit, nuts, etc.)

Preheat oven to 375°. In a large bowl combine the flour, baking powder, salt, and sugar. Cut in the butter and shortening using a pastry cutter or two knives. In a separate bowl, mix together the milk and egg, then add to dry ingredients until incorporated. Stir in a large handful of your choice of filling. I used Craisins with orange flavor, which gave a delicious citrus taste to the dough. I'd suggest adding zest in addition to your choice of dried fruit or nuts. You could also add cinnamon or nutmeg for a spiced version.

Turn the dough out onto a lightly greased baking sheet. Using floured hands, pat out into a circle about 1" thick. Using a pizza cutter or sharp knife slice the dough into 6 or 8 equal sized wedges. Bake for about 15 minutes until the top is lightly browned. Remove and let cool a few minutes before separating the wedges.


Mmm these hit the spot! Not only did they smell delicious baking, but they were simple and fast to whip up! These scones are so fluffy, but still have the heartiness and hint of sweetness you look for in a "real" scone. I love that they used drastically less butter than other recipes, and were ok with just skim milk. The craisins with orange flavor were like little gems hidden in each bite, such a pop of flavor.
