Teeny Tiny Side Dish

I had a large handful of the Trader Joe's Teeny Tiny potatoes leftover from a few weeks ago. I always forget potatoes in the pantry and they start growing eyes and get soggy, but these were too cute to forget!


After washing them, I quartered the large and medium ones, and halved the small ones.


These went into a small skillet with about a tablespoon of olive oil, and a healthy sprinkling of salt and pepper. The heat was at medium high and I let them sit and get some really nice color for a few minutes while the cooked through.

Next I threw in about 1/4 cup of finely chopped green peppers and let sizzle away for the last few minutes.

I originally thought I'd eat mine with ketchup because I'm usually not a fan of white potatoes at all. These were so good, though, that I ate them plain alongside the ribs.

these remind me of the potatoes i used to make carlos.. he liked them with green beans, lots of rosemary.. YUM!!!

I tried it today and I loved them. So easy to make - it was perfect with a garden salad and a pork tenderloin on the grill. Most of all my husband loved them!! :)

I just bought these at Trader Joe's on 14th St. in NYC. They were so adorable I couldn't help myself. Can't wait to try them!
